Description

Now, this is the perfect potato side for your steak! A combination of potato, onion, and bacon will compliment your main dish. Plus, you can always make extra for leftovers.

Ingredients:

    1 lb. thin-skinned baby potatoes (red, white, or multi-color)
    1 medium white onion
    1 lb. thick-cut bacon
    1 tsp. salt
    1/2 tsp. pepper
    3 tbsp. olive oil, divided

Directions

1. Bring a pot of water to boil, boil potatoes for 8 minutes or until tender when pierced by fork. Remove from water and let cool. If you have larger potatoes that are greater than 1 inch in diameter, cut in half. If you have some potatoes that are no larger than 1 inch, leave as is.
2. Meanwhile, cut the onion and bacon into 1 inch pieces. Combine bacon, onion, and potatoes in bowl. Add 2 tbsp. olive oil, salt, and pepper. Toss to coat.
3. Heat a large skillet with 1 tbsp. olive oil (add more if needed). Add potato mixture. Cook for 20 minutes, stirring every 5 minutes or so, until bacon is done and onions/potatoes start to brown.
    • Substitute regular bacon with turkey bacon.
    • Meat free option: Remove bacon from recipe.
