Description

Bacon & Ham Sweet Potato Cups are a tasty breakfast combination with sweet potato, ham, bacon, red pepper, and onion. A fun, delicious twist to change up the routine breakfast! Trust me when I say these are worth the time and effort.

Ingredients:

    1 ½ cups sweet potato, peeled
    1 tbsp. olive oil
    1 cup diced ham
    1/2 lb. bacon, cooked and crumbled
    ½ red pepper, diced
    1 small onion, diced
    1 tbsp. vegan buttery spread
    1 cup vegan cheddar cheese
    ¼ tsp. salt & pepper

Directions

1. Preheat oven to 350 degrees.
2. Peel sweet potato. In a large bowl, coat sweet potato peels with 1 tbsp. olive oil and season with salt and pepper.
3. Cook and crumble bacon. Dice red pepper and onion. Heat 1 tbsp. vegan buttery spread in a small skillet. Sauté red pepper and onion for 5-10 minutes until softened slightly.
4. Divide the sweet potato peels among 12 muffin tins. Layer and press the peels into the bottom and along the sides to create a crust.
5. In a bowl, combine diced onion, diced red peppers, ham, bacon and vegan cheddar cheese. Season with salt and pepper.
6. Divide mixture between the muffin cups. Top with extra vegan cheese.
7. Bake until set through, about 25 minutes.
8. Run knife around edges of the cups. Remove from tins and serve.
    • Good enough on its own, but you can always make extra bacon on the side
    • Skip the bacon or substitute turkey bacon
