Description

On those cold, snowy mornings, warm up with a wonderful bowl of oatmeal. This recipe is more than just oatmeal, it is filled with apples, almond milk, walnuts, and a medley of spices.

Ingredients:

    1 tbsp. buttery spread
    1 1/2 cups apples, diced and divided
    2 tbsp. brown sugar
    1 tsp. cinnamon
    1/4 tsp. ground ginger
    1/4 tsp. ground nutmeg
    Pinch of salt
    2 cups Almond milk
    1 cup old fashioned oats
    1/2 cup chopped walnuts (optional)

Directions

1. Heat a skillet with 1 tbsp. buttery spread over medium heat. Add 1 cup apples, brown sugar, cinnamon, ginger, nutmeg, and salt. Cook for 3 minutes or until the apples have softened.
2. Increase to high heat, add almond milk, and bring to slow boil.
3. Add the oats and reduce the heat to medium. Cook for 3-5 minutes, stirring occasionally. Once some of the water is absorbed, add in walnuts (optional).
4. Serve oatmeal with remaining 1/2 cup of apples and an extra pitch of brown sugar.

    • Substitute Splenda brown sugar for regular brown sugar.
